Ingredients
  

  • 1 pound beef stew meat cut into small pieces
  • 1 tablespoon vegetable oil
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 4 cups beef broth
  • 2 cups water
  • 1 can 14.5 ounces diced tomatoes
  • 2 cups chopped cabbage
  • 2 carrots sliced
  • 2 celery stalks chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Heat the vegetable oil in a large pot over medium-high heat.
  • Add the beef and cook until browned on all sides. Remove the beef from the pot and set aside.
  • In the same pot, add the chopped onion and cook until clear.
  • Add the minced garlic and cook for another minute.
  • Put the beef back in the pot. Add the beef broth, water, and diced tomatoes. Bring to a boil.
  • Lower the heat, cover, and let it simmer for 1 hour.
  • Add the chopped cabbage, sliced carrots, chopped celery, dried thyme, and dried basil. Stir well.
  • Let it simmer for another 30 minutes, or until the vegetables are tender.
  • Add salt and pepper to taste.
  • Garnish with fresh parsley before serving.

Notes

  1. Use fresh, good-quality beef for the best taste.
  2. Add a splash of Worcestershire sauce for more flavor.
  3. For a thicker soup, add a peeled, diced potato with the other vegetables.
  4. Let the soup sit for a few hours after cooking to let the flavors blend more.
  5. Freeze leftovers in individual portions for a quick and easy meal later.
