Ingredients
  

  • All-purpose flour = 1 ½ cups
  • Baking Powder = 1/4 tbsp
  • Baking soda = 1/4 tbsp
  • Cream of tartar = 1/2 tbsp
  • Salt = 1/4 tbsp
  • Butter unsalted softened = 1/2 cup
  • Granulated sugar = 1/2 cup
  • Egg room temperature = 1
  • Vanilla extract = 2 tbsp
  • Almond extract = 1 tbsp
  • Melted white chocolate for dipping
  • Sprinkles optional

Instructions
 

Step 1

  • Prepare a small bowl for icing. Combine flour, baking soda, baking powder, cream of tartar, and salt. Stir until mixed well.

Step 2

  • In a large mixing bowl or stand mixer, beat butter and sugar for 3-4 minutes on medium speed. Add egg, almond extract, and vanilla extract. Mix thoroughly.

Step 3

  • Add dry ingredients and mix on low until blended. If dough is sticky, add more flour.

Step 4

  • Preheat oven to 350°F. Line baking sheets with parchment paper.

Step 5

  • Transfer dough to floured surface, roll to 1/2" thickness. Cut into desired shapes.

Step 6

  • Transfer cookies to prepared baking sheets. Let cool for 30 minutes.

Step 7

  • Bake chilled cookies for 5-7 minutes, until slightly golden. Cookies will be soft.

Step 8

  • Cool cookies slightly before moving to wire rack.

Step 9

  • Panera Shortbread Cookies are ready. Optionally, dip in melted chocolate and sprinkles.

Notes

  • Use good butter for better flavor.
  • Don't mix the dough too much.
