- 2 cups ALL PURPOSE FLOUR
- 1 tbsp BAKING POWDER

- 3 large EGGS
- 1/2 cup WHOLE MILK
- 1/2 cup EXTRA VIRGIN OLIVE OIL
- 1 cup GRUYERE CHEESE
- 1 cup PITTED GREEN OLIVES
- 1 tbsp FRESH ROSEMARY
Preheat your oven to 350 degrees. Grease your loaf pan with oil or butter. Line it with a piece of parchment paper.
Whisk the flour and baking powder together. Add the salt to the large bowl. Mix them until they are well combined.
In another bowl, whisk the eggs. Add the milk and the olive oil. Stir until the mixture is very smooth.
Pour the wet ingredients into the dry ingredients. Use your wooden spoon to stir them. Stop when you see no more dry flour.
Fold in the cheese and the olives. Add your fresh herbs to the dough now. Do not overmix the batter at this point.
Pour the batter into the prepared loaf pan. Smooth the top with a small spatula. Bake for about fifty to sixty minutes.
Insert a toothpick into the center. It should come out clean and dry. Let the bread cool before you slice it.
