Ingredients
  

  • 4 lbs BEEF SHORT RIBS
  • 2 cups RED WINE
  • 2 cups BEEF STOCK
  • 2 medium YELLOW ONIONS
  • 3 large CARROTS
  • 2 stalks CELERY
  • 4 cloves GARLIC
  • 2 tbsp TOMATO PASTE
  • 4 sprigs FRESH THYME
  • 2 tbsp OLIVE OIL
  • 1 tsp SALT
  • 1/2 tsp BLACK PEPPER

Instructions
 

  • Preheat your oven to 325 degrees Fahrenheit right now. Dry the beef ribs with a clean paper towel carefully. Season every side of the meat with salt and pepper.
  • Heat the olive oil in your Dutch oven over high. Brown the meat in batches until it is very dark. Remove the ribs and set them aside on a plate.
  • Add the chopped onions, carrots, and celery to the pot. Cook them for five minutes until they are soft. Stir in the garlic and the thick tomato paste now.
  • Pour in the red wine to deglaze the hot pot. Use your wooden spoon to scrape the dark brown bits. Let the wine boil and reduce by half its size.
  • Add the beef stock and the fresh thyme sprigs. Place the browned ribs back into the liquid very carefully. The liquid should cover about half of the meat.
  • Cover the pot with a tight lid and bake. Let it cook for three hours until the meat falls. The ribs should be very tender when you poke them.

Notes

  • Always brown the meat very well for deep flavor.
  • Use a dry red wine that you like drinking.
  • Do not rush the long cooking time in oven.
  • Let the ribs rest in sauce before you serve.
  • Skim the fat off the top of the liquid.
  • Strain the sauce for a very professional look today.
  • Add a little sugar if the wine tastes sour.
