- 1/2 cup UNSALTED BUTTER melted
- 1 cup GRANULATED SUGAR
- 1 large EGG
- 1 tsp VANILLA EXTRACT
- 1 tsp BAKING SODA
- 1 tsp SALT
- 1 1/2 cups ALL-PURPOSE FLOUR
- 3 large RIPE BANANAS
Preheat your oven to 350 degrees Fahrenheit. Grease your loaf pan with butter or oil. Line it with parchment paper for easy removal.
Whisk the flour and baking soda in a bowl. Add the salt to the dry mix now. Set this bowl aside for a few minutes.
Mash the ripe bananas in a separate bowl. Use a fork to make them very smooth. Small chunks of banana are okay to keep.
Stir the melted butter into the mashed bananas. Mix in the sugar and the beaten egg. Add the vanilla extract to this wet mix.
Fold the dry ingredients into the wet mixture. Do not overmix the batter at this stage. Stop when you see no more white flour.
Pour the thick batter into your prepared pan. Smooth the top with a small metal spatula. This ensures the bread bakes evenly.
Bake the loaf for about sixty minutes. Check the center with a thin wooden toothpick. It should come out clean and very dry.
