- 3 Large EGG WHITES
- 1.5 Cups GRANULATED SUGAR
- 2 tsp LIGHT CORN SYRUP
- 1 tsp VANILLA EXTRACT
- 1/4 tsp CREAM OF TARTAR
- 1/3 Cup COLD WATER
- 1 Pinch SALT
Fill your saucepan with two inches of water. Place it on the stove over medium heat. Let the water reach a very light simmer.
Place a heat-proof bowl over the simmering water. Do not let the bowl touch the water. Add your sugar and egg whites now.
Add the corn syrup and the cream of tartar. Pour in the cold water and the salt. Whisk these ingredients together by hand very gently.
Turn on your hand mixer to a low speed. Beat the mixture over the steam for heat. Do this for about two or three minutes.
Increase the mixer speed to a high setting. Beat the frosting for exactly seven more minutes. Watch it become very white and very thick.
Remove the bowl from the hot saucepan carefully. Add the vanilla extract to the thick mixture. Beat for one more minute to cool it.
- Keep your mixing bowl free of any oil.
- Do not let any egg yolk touch whites.
- Use a timer to beat for seven minutes.
- Apply the frosting to a completely cool cake.
