Mix water, yeast, and sugar in a bowl. Wait 5 minutes.
Combine 1 cup flour and olive oil in another bowl.
Add 3½ cups flour and salt to a large bowl.
Stir in the flour and oil mixture well.
Make a well in the center, add yeast mixture.
Mix until smooth dough forms with spoon.
Transfer dough to floured surface, knead 8-10 minutes.
Shape dough into ball, place in greased bowl.
Cover with damp towel, let rise 1 hour.
Punch dough to release air bubbles gently.
Divide into 12 equal portions on floured surface.
Roll each portion into rectangular log shape.
Place loaves on greased baking sheet.
Cover and let rise again 15-20 minutes.
Preheat oven to 400F while rising.
Bake bread 20-25 minutes until golden.
Cool loaves on wire rack completely.
Notes: Use fresh yeast for best results.
Water should be warm, not hot or cold.
Speed up rise in warm water or oven.
Slow rise in fridge up to 12 hours.
