Ingredients
  

  • 2 pounds of fish fillets snapper or tilapia
  • 2 tablespoons lime juice
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon all-purpose seasoning
  • 2 tablespoons vegetable oil
  • 1 onion sliced
  • 2 cloves garlic minced
  • 1 bell pepper sliced
  • 2 tomatoes chopped
  • 1 Scotch bonnet pepper chopped
  • 1 teaspoon thyme
  • 1 teaspoon allspice
  • 1 cup coconut milk
  • 1 cup fish or chicken broth
  • 2 tablespoons brown sugar
  • 2 tablespoons soy sauce

Instructions
 

  • Rinse fish with lime juice and water.
  • Season fish with salt, pepper, and seasoning.
  • Heat oil in a skillet over medium heat.
  • Fry fish until golden brown on both sides.
  • Remove fish and set aside on a plate.
  • Sauté onions, garlic, and peppers in the skillet.
  • Add tomatoes and Scotch bonnet pepper.
  • Stir in thyme, allspice, coconut milk, and broth.
  • Add brown sugar and soy sauce to the mix.
  • Simmer the sauce for 10 minutes.
  • Return fish to the skillet with the sauce.
  • Simmer for another 15 minutes.
  • Serve hot and enjoy!
