Equipment

  • Mixing Bowl
  • Baking Sheet
  • Measuring cups and spoons
  • Parchment paper
  • Small saucepan
  • Pastry brush
  • Sharp knife

Ingredients

  • 2 cups gluten-free flour blend
  • 1 tablespoon sugar
  • 2 teaspoons instant yeast
  • 1 teaspoon salt
  • 1 teaspoon xanthan gum
  • 3/4 cup warm water
  • 2 tablespoons olive oil
  • 1 egg
  • 4 tablespoons butter
  • 4 cloves garlic minced
  • 2 tablespoons fresh parsley chopped
  • 1/4 teaspoon salt

Instructions

  • Mix dry ingredients in a large bowl. Add warm water, oil, and egg.
  • Stir until a dough forms. The dough will be slightly sticky. That's normal for gluten-free recipes.
  • Cover the bowl with a towel. Let it rest for 15 minutes. The dough will puff up slightly. This step makes softer knots.
  • Divide dough into 8 equal pieces. Roll each piece into a rope. Tie each rope into a simple knot. Place on parchment-lined baking sheet.
  • Let knots rest for 10 minutes. Meanwhile, preheat your oven to 400°F. This quick rest makes them fluffier.
  • Bake for 12-15 minutes until golden. They should look lightly browned. Don't overbake or they'll get hard.
  • Melt butter in a small pan. Add minced garlic and cook 1 minute. Stir in parsley and salt. Remove from heat immediately.
  • Brush hot knots generously with garlic butter. Serve warm for best taste. They're absolutely delicious!

Notes

  • Use a good gluten-free flour blend.
  • Choose one with xanthan gum already added.
  • If yours doesn't have it, add it.
  • Don't skip the xanthan gum step.
  • It holds everything together perfectly.
  • Warm water activates the yeast properly.
  • Test with your finger first.
  • It should feel like warm bathwater.
  • Too hot kills the yeast.
  • Don't overwork the dough unnecessarily.
  • Gluten-free dough is more delicate.
  • Handle it gently when shaping knots.
  • Brush garlic butter while knots are hot.
  • They absorb flavor better this way.
  • Use a generous amount of butter.
  • Store leftovers in an airtight container.
  • Reheat in the oven for best results.
  • Microwave makes them slightly chewy.
