- 2 large seedless oranges.
- 3 cups almond meal.
- 1 cup white sugar.
- 1 tsp baking powder.
- 6 large eggs.
- Butter for greasing the pan.
Wash your oranges well. Put them in a pot of water. Boil them for two hours. This makes them very soft.
Let the oranges cool down. Cut them and remove any seeds. Blend the whole oranges into a smooth paste.
Whisk the eggs and sugar together. Do this until the mix is pale. Use a large bowl for this.
Fold in the orange puree. Add the almond meal and baking powder. Stir everything gently until smooth.
Pour the batter into the tin. Bake at 160°C for 60 minutes. The top should be golden brown.
Let the cake cool in the pan. Move it to a wire rack later. Dust with powdered sugar if you like.
- Use thin-skinned oranges for less bitterness.
- Make sure the boiled oranges are cool first.
- Do not over-mix the egg batter.
- Check the center with a skewer.
- Let the cake rest before slicing it.
