Ingredients
  

  • Cherry or grape tomatoes = 5 cups
  • Onion Finely diced = ½ cup
  • Paprika = ½ tsp
  • Fresh oregano leaves = 2 sprigs OR 1 tsp dried
  • Black pepper = ¼ tsp
  • Cinnamon = ¼ tsp
  • Cumin = ½ tsp
  • Salt = ½ tsp
  • White wine = ¼ cup
  • Bacon fat = 2 tsp
  • small jalapenos Finely diced = 2
  • Olive oil = 1 tsp
  • Garlic Minced = 1 tsp

Instructions
 

  • Heat olive oil and bacon fat in a skillet. Add onions and jalapenos. Cook on low heat until onions turn brown. Add minced garlic and cook for 5 more minutes.
  • In a saucepan, combine cherry tomatoes, cumin, oregano, paprika, salt, black pepper, and cinnamon. Cook on medium-low for an hour or until tomatoes soften. Use a spoon to break them open. Add water if needed.
  • Add sauteed onions and jalapenos to the tomato mixture. Simmer together.
  • Once tomatoes break down into a paste and mixture thickens, add white wine. Bring to a boil, then simmer for 5 minutes on low heat. For a smoother texture, use a food processor.
  • Let El Pato Tomato Sauce cool to room temperature. Refrigerate or freeze until needed. Enjoy!
