Ingredients
  

  • 1 lb ground pork or chicken
  • 1 tablespoon sesame oil
  • 1 medium onion diced
  • 2 garlic cloves minced
  • 2 cups coleslaw mix or shredded cabbage
  • 1 medium carrot sliced thin
  • 4 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon ground ginger
  • Salt and pepper to taste
  • Green onions chopped (for garnish)
  • Optional: Sriracha or chili flakes for heat

Instructions
 

  • Heat sesame oil in a large pot over medium heat.
  • Add the ground pork or chicken. Cook until it turns brown.
  • Add the onion and garlic. Cook until soft.
  • Add the coleslaw mix and carrot. Cook for 2 minutes.
  • Pour in chicken broth, soy sauce, rice vinegar, and ginger.
  • Bring to a simmer and cook for 10 minutes.
  • Taste and add salt and pepper if needed.
  • Pour into bowls and top with chopped green onions.
  • Serve hot and enjoy! You can add chili flakes for extra spice.
