Equipment

  • Large Mixing Bowl
  • Electric mixer or whisk
  • Measuring cups and spoons
  • Baking Sheet
  • Parchment paper
  • Clean kitchen towel
  • Small bowl

Ingredients

  • 2 cups gluten free flour blend
  • 1 tablespoon active dry yeast
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 teaspoon xanthan gum
  • 3/4 cup warm water
  • 1/4 cup olive oil
  • 2 eggs plus 1 for brushing
  • 1 teaspoon apple cider vinegar

Instructions

  • Mix warm water, sugar, and yeast together.
  • Let it sit for 5 minutes.
  • It should become bubbly and foamy.
  • This means your yeast is working.
  • Add flour, salt, and xanthan gum.
  • Mix them well in your large bowl.
  • Make sure everything is evenly combined.
  • Beat eggs, olive oil, and vinegar together.
  • Pour this into the yeast mixture.
  • Stir until well combined.
  • Add wet ingredients to dry ingredients slowly.
  • Mix on low speed first.
  • Then increase speed for 2 minutes.
  • The dough will be slightly sticky.
  • Grease your hands with a little oil.
  • Divide dough into 12 equal pieces.
  • Shape each piece into a ball.
  • Place them on your baking sheet.
  • Cover rolls with a clean towel.
  • Let them rise for 30-40 minutes.
  • They should almost double in size.
  • Preheat your oven to 375°F.
  • Brush rolls with beaten egg.
  • Bake for 18-20 minutes until golden.
  • Let them cool for 5 minutes.

Notes

  • Don't skip the xanthan gum ingredient.
  • It helps bind the dough together.
  • Use warm water, not hot water.
  • Hot water kills the yeast completely.
  • Let the dough rise in a warm spot.
  • Cold rooms slow down the rising process.
  • Brush with egg for a golden color.
  • This makes them look beautiful too.
  • Store leftovers in an airtight container.
  • They stay fresh for 2-3 days.
