Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 12 oz twisted pasta rotini or fusilli
  • 1 tablespoon salt for pasta water
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons butter
  • 1 teaspoon Italian seasoning
  • 1/4 cup fresh parsley chopped

Instructions
 

  • Season chicken breasts with salt, pepper, and garlic powder.
  • Heat olive oil in large skillet over medium-high heat.
  • Cook chicken breasts for 6-7 minutes per side.
  • Remove chicken and let rest for 5 minutes.
  • Slice chicken into strips and set aside.
  • Cook twisted pasta according to package directions until tender.
  • Drain pasta and reserve 1/2 cup pasta water.
  • Add butter to the same skillet used for chicken.
  • Sauté minced garlic for 30 seconds until fragrant.
  • Pour in heavy cream and bring to gentle simmer.
  • Add Parmesan cheese and whisk until smooth and melted.
  • Stir in mozzarella cheese until completely melted and creamy.
  • Add Italian seasoning and mix well into sauce.
  • Return sliced chicken to the skillet with sauce.
  • Add cooked pasta and toss everything together gently.
  • Use pasta water to thin sauce if needed.
  • Garnish with fresh parsley before serving immediately.

Notes

  1. Pound chicken evenly This ensures uniform cooking and prevents dry spots.
  2. Don't overcook the chicken Use a meat thermometer to check 165°F internal temperature.
  3. Save pasta water The starch helps bind the sauce to pasta perfectly.
  4. Use fresh Parmesan Freshly grated cheese melts better than pre-shredded varieties.
