Equipment

  • Shallow dish
  • Frying pan
  • Mixing Bowls
  • Plate
  • Paper towels

Ingredients

  • Low-fat buttermilk: ⅓ cup
  • Boneless chicken breasts: 1-½ lbs cut into ½ inch pieces
  • All-purpose flour: ⅓ cup
  • Peanut oil: 8 cups
  • Unseasoned breadcrumbs: 1 cup
  • Crushed corn flakes: 1 cup
  • Beaten egg: 1 egg
  • Salt: ¼ tsp
  • Freshly ground black pepper: ¼ tsp
  • Italian seasoning: ½ tsp

Instructions

Step 1. Prepare Chicken:

  • Take the skinless boneless chicken breasts and cut them into beautiful ½ inch pieces.
  • Find a shallow dish and pour the buttermilk in it. Let your chicken soak in the buttermilk and place in the refrigerator.

Step 2. Prepare Breading:

  • Find a deep frying pan and pour the oil in it. Heat it to welcome the chicken fingers.
  • Then take a nice bowl, enough to accommodate the breading components. Add bread crumbs, cornflakes, salt, pepper, and Italian seasoning in this bowl and give them a mix to work them together to get a breeding mixture.
  • Then find the small brother of the bowl and beat the egg in it.
  • Spread the all-purpose flour in a shallow dish.

Step 3. Fry:

  • Take your buttermilk soaked chicken fingers and dredge them in the flour. Then dip in the egg, and dredge in the breadcrumbs mixture.
  • Sizzle the chicken in the hot oil and wait for 7-8 minutes.
  • Then take out and drain on paper towels.
  • Love extra crisp? Let the fingers cool a little bit to allow them to get the crisp.
  • Zaxby’s chicken fingers are ready. Serve with your favorite dipping sauce. Bon Appetit!

Notes

  • One thing I recommend to make sure is that you fry and serve immediately. If you are even a few minutes late, it will dull the texture and sizzle of the chicken fingers.
  • If you love tender and juicier chicken, marinate the chicken for at least 2 hours. It's worth it.
  • Let the chicken enjoy its time in the frying pan by frying in small batches that do not suffocate the chicken.
  • If you are using a dipping sauce, use it chilled to complement the sizzling chicken fingers.
