Equipment

  • Large Mixing Bowl
  • Potato masher or ricer
  • Large non-stick frying pan.
  • Sharp knife
  • Rolling Pin
  • Flat spatula.

Ingredients

  • 500 g boiled potatoes floury ones work best.
  • 50 g salted butter.
  • 100 g all-purpose flour.
  • Half a teaspoon of salt.
  • Extra flour for dusting.
  • Extra butter for frying.

Instructions

  • Mash your hot boiled potatoes until very smooth. Ensure there are no lumps left behind.
  • Stir in the butter and salt while potatoes are warm. Let the butter melt completely into the mix.
  • Add the flour slowly to the mashed potatoes. Mix by hand to form a soft dough.
  • Put dough on a floured surface. Roll it into a circle about one inch thick.
  • Use a knife to cut the circle into quarters. "Farl" actually means four parts in Gaelic.
  • Heat a pan with a little butter. Cook each side for three minutes until golden brown.

Notes

  • Use dry, floury potatoes like Russets.
  • Do not overwork the dough.
  • Always serve them immediately while hot.
  • Use leftover mashed potatoes to save time.
  • Keep the heat medium to avoid burning.
