Equipment

  • Sharp kitchen knife
  • Large heavy pot or Dutch oven.
  • Cutting Board
  • Vegetable peeler
  • Measuring Cups

Ingredients

  • 8 thick pork sausages.
  • 4 thick slices of back bacon.
  • 4 large potatoes peeled and sliced.
  • 2 large onions sliced into rings.
  • 500 ml beef or chicken stock.
  • 2 tablespoons fresh parsley chopped.
  • Salt and black pepper to taste.

Instructions

  • Cut the bacon into small pieces. Keep the sausages whole or cut in half.
  • Fry the bacon and sausages in a pan. Just brown them slightly for better flavor.
  • Place half of the onions in the pot. Then add a layer of sliced potatoes.
  • Put the browned sausages and bacon on top. Sprinkle some fresh parsley over the meat.
  • Add the rest of the onions and potatoes. Season each layer with pepper and little salt.
  • Pour the stock over everything in the pot. Do not cover the potatoes completely.
  • Cover the pot with a tight lid. Bake at 150°C for about three hours.

Notes

  • Use high-quality pork sausages for the best taste.
  • Do not boil the stew too fast.
  • Low and slow cooking makes the meat tender.
  • Add a splash of stout for a deeper flavor.
  • Always serve it with thick crusty bread.
  • The flavor is even better the next day.
