Equipment

  • Electric hand mixer
  • Large Mixing Bowl
  • Jelly Roll Pan
  • Parchment paper
  • Small saucepan
  • Sifter
  • Rubber spatula
  • Offset spatula
  • Clean kitchen towel
  • Measuring Cups

Ingredients

  • 4 Large Eggs
  • 3/4 Cup Granulated Sugar
  • 1/2 Cup All-purpose Flour
  • 1/4 Cup Cocoa Powder
  • 1 Tsp Vanilla Extract
  • 8 Oz Mascarpone Cheese
  • 1 Cup Heavy Whipping Cream
  • 1/2 Cup Powdered Sugar
  • 1/2 Cup Strong Espresso
  • 1 Tbsp Marsala Wine
  • 1/4 Tsp Salt

Instructions

  • Bake the Sponge: Whisk eggs and sugar until very thick. Fold in flour and cocoa powder gently. Spread on a pan and bake ten minutes.
  • Roll the Cake: Flip the hot cake onto a towel. Roll it up tightly while it is warm. Let it cool in this rolled shape.
  • Make Coffee Syrup: Mix hot espresso with sugar and wine. Let the syrup cool down to room temperature.
  • Prepare Cream Filling: Beat mascarpone, cream, and powdered sugar together. Whisk until the mixture forms stiff, thick peaks.
  • Soak the Sponge: Unroll the cooled cake very carefully. Brush the coffee syrup all over the inside.
  • Spread the Filling: Apply a thick layer of mascarpone cream. Leave a small border around the cake edges.
  • Roll it Again: Roll the cake back up without the towel. Keep the seam side facing the bottom.
  • Frost the Outside: Cover the log with more cream or chocolate. Use a fork to create a bark texture.
  • Dust with Cocoa: Sprinkle cocoa powder over the finished log. This makes it look like a real forest log.

Notes

➔ Use room temperature eggs for a bigger cake volume.
➔ Sift the flour to avoid tiny dry flour clumps.
➔ Do not overbake the sponge or it will break.
➔ Roll the cake while it is still very hot.
➔ Let the espresso syrup cool before using it.
➔ Use full-fat mascarpone for the thickest, richest cream.
➔ Chill the cake for two hours before you slice.
➔ Use a serrated knife for the cleanest cake slices.
➔ Dust cocoa powder just before serving your guests.
➔ Wipe your knife between every single cake cut.
