Ingredients

  • Granulated sugar = 1 cup
  • Large eggs = 3
  • Vanilla extract = 2 teaspoons
  • All-purpose flour = 3 cups
  • Ice water = 1.5 cups
  • Baking powder = 1 teaspoon
  • Powdered sugar for dusting
  • Oil for frying as needed

Instructions
 

Prepare the Cheesecake

  • Preheat oven to 325°F (163°C).
  • Line pan with parchment paper.
  • Beat cream cheese until smooth.
  • Mix in sugar and vanilla.
  • Add eggs one at a time, beat each.
  • Spread mixture in pan.
  • Bake for 45 minutes until set and golden.
  • Cool, then freeze for 4 hours.

Make the Tempura Batter

  • Mix flour and baking powder.
  • Add ice water, stir until combined.

Fry the Cheesecake

  • Heat oil to 375°F (190°C).
  • Cut frozen cheesecake into wedges.
  • Dip each piece in tempura batter.
  • Fry until golden brown, about 4 minutes.
  • Drain on paper towels, dust with powdered sugar.
