- 2 6 oz CHILEAN SEA BASS
- 2 tbsp UNSALTED BUTTER
- 1 tsp SEA SALT
- 1/2 tsp BLACK PEPPER
- 1/4 cup PANKO BREADCRUMBS
- 1 tsp GARLIC POWDER
- 1 tbsp FRESH PARSLEY
- 1 tbsp LEMON JUICE
Pat the sea bass fillets very dry. Use a clean paper towel for this. Dry fish will sear much better.
Season the fish with salt and pepper. Do this on all sides. This builds a great flavor base.
Melt the butter in your hot skillet. Wait until the butter starts to bubble. Do not let it turn brown.
Place the fish in the hot pan. Press it down gently with your spatula. Cook it for three minutes.
Flip the fillets over very carefully. The bottom should be golden brown. Cook the other side now.
Mix crumbs, garlic, and herbs together. Press this mix onto the fish tops. It will stick to the moisture.
Place the pan in the oven. Bake at 400 degrees for five minutes. The fish should flake easily.
- Buy the freshest fish you can find today.
- Make sure the pan is very hot first.
- Do not move the fish while it sears.
- Use cold butter for a thicker crust topping.
- Add lemon juice just before you serve it.
