Slice the potatoes into ½ inch thick sticks.
Use a French fry cutter for even thickness.
Soak the potato sticks in iced water for 1 hour.
If you have time, soak overnight for extra crispiness.
Rinse the fries 2-3 times with cold water.
Place them on paper towels and pat them dry.
In a small bowl, mix the smoked paprika, cayenne pepper, garlic powder, dried oregano, and salt.
Set the seasoning mix aside.
Heat oil in a large pan or deep fryer to 300ºF (150ºC).
Add the potatoes to the oil using a slotted spoon.
Fry in batches for about 4-5 minutes each.
Transfer the fries to paper towels to drain.
Repeat with the rest of the potatoes.
Increase the oil heat to 400ºF (200ºC).
Fry each batch again until crispy and golden, about 3-4 minutes.
Sprinkle the fries with Cajun seasoning immediately.
