Ingredients
  

  • Russet potatoes washed = 3 large
  • Vegetable oil = For frying
  • Smoked paprika = 1 teaspoon
  • Cayenne pepper = ¼-½ teaspoon
  • Garlic powder = ¾ teaspoon
  • Dried oregano = ½ teaspoon
  • Salt = ¾ teaspoon or as needed

Instructions
 

  • Slice the potatoes into ½ inch thick sticks.
  • Use a French fry cutter for even thickness.
  • Soak the potato sticks in iced water for 1 hour.
  • If you have time, soak overnight for extra crispiness.
  • Rinse the fries 2-3 times with cold water.
  • Place them on paper towels and pat them dry.
  • In a small bowl, mix the smoked paprika, cayenne pepper, garlic powder, dried oregano, and salt.
  • Set the seasoning mix aside.
  • Heat oil in a large pan or deep fryer to 300ºF (150ºC).
  • Add the potatoes to the oil using a slotted spoon.
  • Fry in batches for about 4-5 minutes each.
  • Transfer the fries to paper towels to drain.
  • Repeat with the rest of the potatoes.
  • Increase the oil heat to 400ºF (200ºC).
  • Fry each batch again until crispy and golden, about 3-4 minutes.
  • Sprinkle the fries with Cajun seasoning immediately.
  • Enjoy with spicy mayo, Wingstop Ranch, or ketchup!
