Ingredients
  

  • Mixed ground beef or sausage browned and drained = 1 lb
  • Onion diced = 1 medium
  • Green bell pepper diced = 1
  • Celery chopped = 2 cups
  • Diced tomatoes = 2 28 oz. cans
  • Whole canned tomatoes = 1 28 oz. can
  • Ground cumin = to taste
  • Chili powder = to taste
  • Pinto beans drained and rinsed = 1 (14.5 oz.) can
  • Black beans drained and rinsed = 1 (14.5 oz.) can
  • Kidney beans drained and rinsed = 1 (14.5 oz.) can
  • Chili seasoning mix = 1 1.25 oz. package
  • Sour cream or chopped green onion = for garnish

Instructions
 

  • In a skillet, brown the ground beef and sausage.
  • Drain the meat and set it aside for now.
  • Spray a large pot with nonstick cooking spray.
  • Heat the pot over medium heat until warm.
  • Add diced onion, green pepper, and celery to the pot.
  • Sauté the veggies until they begin to soften.
  • Stir in both diced and whole tomatoes carefully.
  • Add cumin and chili powder, seasoning to your taste.
  • Cook the mixture for about 8 minutes, until tender.
  • Add beans, browned meat, and chili seasoning to the pot.
  • Partially cover and let it simmer for 4 hours.
  • Serve hot with cheddar cheese, sour cream, and green onions.
