Ingredients
  

  • Potatoes large, washed and diced = 4
  • Olive oil = 2 tablespoons
  • Chili powder = 1 teaspoon
  • Paprika = 1 teaspoon
  • Cumin = 1/2 teaspoon
  • Salt and pepper = to taste
  • Shredded cheese cheddar or Mexican blend = 1 cup
  • Cooked chicken diced = 1/2 cup
  • Cooked bacon crumbled = 1/2 cup
  • Green onions sliced = 1/4 cup
  • Sour cream = 1/4 cup
  • Fresh cilantro chopped = 1/4 cup

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Line a baking sheet with parchment paper or foil.
  • In a large bowl, mix diced potatoes with olive oil.
  • Add chili powder, paprika, cumin, salt, and pepper.
  • Toss until potatoes are coated well.
  • Spread the potatoes in a single layer on the sheet.
  • Bake in the oven for 25-30 minutes.
  • Stir the potatoes halfway through baking time.
  • Remove from the oven when golden brown and crispy.
  • Sprinkle shredded cheese over the hot potatoes.
  • Return the baking sheet to the oven.
  • Bake for an extra 3-5 minutes to melt cheese.
  • Remove Papas Locas from the oven.
  • Transfer to a serving platter.
  • Top with diced chicken and crumbled bacon.
  • Add sliced green onions and sour cream.
  • Sprinkle with chopped fresh cilantro.
  • Serve Papas Locas hot and enjoy!
