Mix Dijon mustard, honey, and mayonnaise together.
Add lemon juice and stir well.
Set aside in the refrigerator.
This sauce makes the dish special.
Fry bacon until crispy in your skillet.
Remove and drain on paper towels.
Chop into small pieces once cooled.
Save some bacon grease for mushrooms.
Cook mushrooms in remaining bacon grease.
Season with salt and pepper lightly.
Cook until golden brown and tender.
Set aside when done.
Season chicken breasts with salt and pepper.
Heat olive oil in the skillet.
Sear chicken for 3-4 minutes per side.
Don't cook completely through yet.
Preheat oven to 375°F (190°C).
Place chicken in baking dish.
Brush honey mustard sauce generously on top.
Add mushrooms over each breast.
Layer bacon pieces next.
Top with both cheeses mixed together.
Bake for 20-25 minutes until done.
Chicken should reach 165°F internal temperature.
