Ingredients
  

  • cups jasmine rice
  • 8 oz mixed mushrooms sliced
  • 3 cups chicken broth
  • 1 medium onion diced
  • 3 garlic cloves minced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Heat olive oil in large pot over medium heat.
  • Add diced onion and cook until softened completely.
  • Stir in minced garlic and cook for one minute.
  • Add sliced mushrooms and cook until golden brown.
  • Season mushrooms with salt and pepper generously.
  • Add rice to pot and stir for two minutes.
  • Pour chicken broth slowly into the rice mixture.
  • Add dried thyme and bring to gentle boil.
  • Reduce heat to low and cover pot tightly.
  • Simmer for eighteen minutes without lifting the lid.
  • Remove from heat and let rest five minutes.
  • Fluff rice with fork and add butter.
  • Garnish with fresh parsley before serving immediately.

Notes

  1. Use day-old rice for better texture and flavor
  2. Don't lift lid during cooking for fluffy rice
  3. Toast rice briefly before adding liquid for nuttiness
  4. Mix mushroom varieties for complex flavor profiles
  5. Add frozen peas in last five minutes
