Equipment

  • Large skillet or frying pan
  • Sharp knife and cutting board
  • Measuring cups and spoons
  • Wooden Spoon
  • Tongs
  • Small bowl
  • Plate

Ingredients

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 5 cloves garlic minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • 1 cup sun-dried tomatoes chopped
  • 2 cups fresh spinach
  • ½ cup parmesan cheese grated
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  • Season chicken breasts with salt and pepper.
  • Make sure both sides are covered.
  • Pat them dry with paper towels.
  • This helps them brown nicely.
  • Heat olive oil in your large skillet.
  • Add chicken breasts to the hot pan.
  • Cook for 6 minutes on each side.
  • The chicken should be golden brown.
  • Remove and set aside on a plate.
  • Use the same skillet for more flavor.
  • Add minced garlic to the pan.
  • Sauté for 30 seconds until fragrant.
  • Don't let it burn or turn brown.
  • Pour in heavy cream and chicken broth.
  • Stir everything together really well.
  • Add sun-dried tomatoes and Italian seasoning.
  • Let it simmer for 3 minutes.
  • Toss in fresh spinach leaves now.
  • They'll wilt in about 1 minute.
  • Stir in parmesan cheese until melted.
  • The sauce will become thick and creamy.
  • Return chicken to the skillet carefully.
  • Spoon sauce over each piece generously.
  • Cook for 2 more minutes together.
  • Garnish with fresh basil before serving.

Notes

  • Pound chicken breasts to even thickness first.
  • This ensures they cook at the same rate.
  • Don't overcook or chicken becomes dry and tough.
  • Use full-fat cream for the richest sauce.
  • Fresh garlic tastes much better than jarred versions.
  • Let chicken rest before slicing into it.
  • Add more parmesan if you love cheese.
  • Serve immediately while the sauce is hot.
  • Pair with pasta or mashed potatoes perfectly.
