Chop bacon into small, bite-sized pieces.

Reduce heat to low immediately now.
Add grated Parmesan cheese slowly while stirring.
Whisk until the sauce is smooth.
Remove pan from heat for safety.
Let it cool for 2 minutes.
Whisk egg yolks in small bowl.
Add a little hot sauce slowly.
This prevents eggs from scrambling instantly.
Pour egg mixture into the sauce.
Whisk constantly until thick and creamy.
Boil large pot of salted water.
Add ravioli and cook per package.
Usually takes 3-5 minutes for frozen.
Fresh ravioli cooks even faster today.
Drain ravioli gently in your colander.
Add cooked ravioli to the sauce.
Toss gently to coat each piece.
Add crispy bacon back into pan.
Season with salt and black pepper.
Garnish with fresh parsley and Parmesan.
