Ingredients
  

  • 1 pound cheese ravioli frozen or fresh
  • 6 slices bacon chopped into pieces
  • 3 cloves garlic minced finely
  • 1 cup heavy cream for richness
  • 1 cup whole milk for creaminess
  • 1 cup grated Parmesan cheese plus extra
  • 2 egg yolks for silky texture
  • 2 tablespoons butter for flavor
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Chop bacon into small, bite-sized pieces.
  • Heat a medium saucepan over medium heat.
  • Add bacon and cook until crispy.
  • This takes about 6-8 minutes.
  • Remove bacon and set it aside.
  • Keep 1 tablespoon of bacon grease.
  • In the same pan, add butter.
  • Let it melt completely and gently.
  • Add minced garlic to melted butter.
  • Cook for 1 minute until fragrant.
  • Don't let the garlic burn brown.
  • Pour in heavy cream and milk.
  • Stir everything together really well.
  • Bring mixture to a gentle simmer.
  • Reduce heat to low immediately now.
  • Add grated Parmesan cheese slowly while stirring.
  • Whisk until the sauce is smooth.
  • Remove pan from heat for safety.
  • Let it cool for 2 minutes.
  • Whisk egg yolks in small bowl.
  • Add a little hot sauce slowly.
  • This prevents eggs from scrambling instantly.
  • Pour egg mixture into the sauce.
  • Whisk constantly until thick and creamy.
  • Boil large pot of salted water.
  • Add ravioli and cook per package.
  • Usually takes 3-5 minutes for frozen.
  • Fresh ravioli cooks even faster today.
  • Drain ravioli gently in your colander.
  • Add cooked ravioli to the sauce.
  • Toss gently to coat each piece.
  • Add crispy bacon back into pan.
  • Season with salt and black pepper.
