Course Main Dish

Equipment

  • Large skillet or frying pan
  • Tongs or spatula
  • Measuring cups and spoons
  • Small bowl for dredging flour
  • Plate for cooked chicken
  • Whisk

Ingredients

  • 2 large chicken breasts sliced thin
  • 1/2 cup all-purpose flour
  • Salt and pepper to taste
  • 4 tablespoons butter divided
  • 2 tablespoons olive oil
  • 1/3 cup fresh lemon juice
  • 1/2 cup chicken broth
  • 1/4 cup capers drained
  • 2 tablespoons fresh parsley chopped

Instructions

  • Slice your chicken breasts in half horizontally.
  • This makes them thinner and cooks faster.
  • Pound them gently if they're still thick.
  • Season both sides with salt and pepper.
  • Put flour in a shallow bowl.
  • Coat each chicken piece lightly with flour.
  • Shake off any excess flour.
  • Heat 2 tablespoons butter and olive oil together.
  • Use medium-high heat in your skillet.
  • Wait until the butter melts completely.
  • Add the floured chicken pieces carefully.
  • Cook for 3-4 minutes per side.
  • The chicken should turn golden brown.
  • Remove chicken and set aside on a plate.
  • Keep the same pan on the stove.
  • Add chicken broth and lemon juice immediately.
  • Scrape up any brown bits from the pan.
  • These bits add amazing flavor.
  • Let the sauce simmer for 2 minutes.
  • Add capers and remaining 2 tablespoons butter.
  • Stir until butter melts into the sauce.
  • Return the cooked chicken to the pan.
  • Spoon sauce over each piece generously.
  • Let everything simmer together for 2 minutes.
  • The chicken will soak up the flavors.
  • Sprinkle fresh parsley on top.
  • Serve hot with pasta or crusty bread.

Notes

  • Don't skip pounding the chicken thin.
  • It cooks evenly and stays tender.
  • Use fresh lemon juice, not bottled.
  • Fresh tastes so much better.
  • Don't overcrowd your pan while cooking.
  • This makes chicken soggy instead of crispy.
  • Add a splash of white wine if you have it.
  • It makes the sauce even more restaurant-style.
  • Rinse capers before using if they're too salty.
