Ingredients

  • 3 cups of all-purpose flour.
  • 1 tablespoon of baking powder.
  • 1/2 teaspoon of salt.
  • 1 1/2 cups of warm water.
  • 2 tablespoons of melted shortening or butter optional.
  • Vegetable oil for frying.
  • For the Taco Toppings: Chili or seasoned beans shredded lettuce, diced tomatoes, and cheddar cheese.

Instructions

Mix the Dry

  • In your large mixing bowl, whisk together the flour, baking powder, and salt until they are well combined.

Add the Liquid

  • Slowly pour the warm water (and melted butter if using) into the flour. Stir gently with a fork until a soft dough forms.

Let it Rest

  • Cover the bowl with a clean cloth and let the dough rest for 30 to 60 minutes. This is the secret to a soft, stretchy bread.

Shape the Dough

  • Divide the dough into 8 equal balls. On a lightly floured surface, pat or stretch each ball into a 6-inch circle about 1/2 inch thick.

Heat the Oil

  • Pour 2 inches of oil into your skillet. Heat over medium-high until it reaches 180°C or a small piece of dough sizzles instantly.

Fry the Bread

  • Carefully slide a dough circle into the oil. Fry for 1 to 2 minutes until the bottom is golden and bubbles form on top.

Flip and Finish

  • Turn the bread over with tongs and fry for another minute until both sides are perfectly brown and puffy.

Drain and Top

  • Drain on paper towels. While warm, top with hot chili, lettuce, cheese, and tomatoes to complete your Navajo Taco.

Notes

  • Don't over-knead. Stir the dough just until it comes together; over-working the flour will make the bread tough instead of fluffy.
  • Warm water is key. Using warm water helps activate the baking powder and makes the dough much easier to stretch by hand.
  • Check the oil. If the oil is too cold, the bread will be greasy; if it is too hot, the outside will burn before the inside cooks.
  • Poke a hole. Poking a small hole in the center of the dough circle before frying helps it lay flat and cook more evenly.
  • Keep it covered. Keep the finished bread wrapped in a warm towel while you fry the rest so they stay soft and flexible.
  • Try it sweet. These are also delicious served with a drizzle of honey and a sprinkle of powdered sugar for dessert.
