Ingredients
  

  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup milk
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1/2 cup diced green chilies
  • 1/4 cup diced tomatoes
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt to taste

Instructions
 

  • Melt butter in a saucepan over medium heat.
  • Stir in flour and cook for 1 minute.
  • Gradually whisk in milk, stirring all the time.
  • Cook until the mixture thickens a little.
  • Reduce heat to low.
  • Add cheddar and Monterey Jack cheese.
  • Stir until the cheese melts completely.
  • Mix in green chilies and tomatoes.
  • Add cumin, garlic powder, onion powder, and salt.
  • Stir until everything is well mixed.
  • Serve warm.
