Ingredients
  

  • 4 chicken breasts or thighs
  • 1/4 cup olive oil
  • 3 limes juiced
  • 2 cloves garlic minced
  • 1 teaspoon cumin powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon oregano
  • Salt and pepper to taste

Instructions
 

  • Mix olive oil in large bowl.
  • Add fresh lime juice and whisk well.
  • Stir in minced garlic cloves completely.
  • Add cumin, chili powder, and paprika.
  • Mix in oregano, salt, and pepper.
  • Place chicken in marinade mixture thoroughly.
  • Seal bag or cover dish tightly.
  • Refrigerate for minimum 2 hours.
  • Cook chicken using preferred cooking method.

Notes

  1. Marinate chicken for 4-8 hours for maximum flavor
  2. Don't marinate longer than 24 hours to prevent mushiness
  3. Save some marinade separately for basting while cooking
  4. Pat chicken dry before cooking for better searing
  5. Let chicken rest 5 minutes after cooking
