Equipment

  • Large Mixing Bowl
  • Electric hand mixer
  • Fine-mesh sieve
  • Rubber spatula
  • Lemon zester
  • Juicer

Ingredients

  • 200 grams UNSATURATED BUTTER
  • 400 grams ICING SUGAR
  • 2 tbsp FRESH LEMON JUICE
  • 1 tsp LEMON ZEST
  • 1 tbsp MILK
  • 1 pinch SALT

Instructions

  • Place your soft butter into the clean mixing bowl carefully. Beat it with your electric hand mixer for three full minutes. The butter will turn very pale and look fluffy.
  • Sift your sweet icing sugar through the fine mesh sieve now. Add it to the whipped butter in small batches slowly. Mix on low speed so you do not make a white cloud.
  • Pour the fresh lemon juice into your thick mixture gently. Add the fine lemon zest and a tiny pinch of salt next. Beat the frosting for two more minutes until light.
  • Check the texture of your smooth frosting with a clean spoon. Add one tablespoon of milk if the mixture feels too thick. Mix one last time until it looks perfectly spreadable.

Notes

  • Always use room temperature butter for a smooth texture.
  • Sift the icing sugar to avoid any tiny hard lumps.
  • Use fresh lemons instead of bottled juice for best flavor.
  • Beat the butter long enough until it turns pale.
  • Add sugar slowly to prevent a big kitchen mess.
  • Scrape the bowl often to mix everything very evenly.
  • Adjust milk carefully to get the best piping thickness.
  • Chill the frosting slightly before you start your decoration.
  • Add extra zest if you love a stronger punch.
  • Use a pinch of salt to balance heavy sweetness.
