Large Mixing Bowl
Electric hand mixer
Two Round Cake Pans
Parchment paper
Rubber spatula
Wire cooling rack
- 1 ½ cups ALL-PURPOSE FLOUR
- 1 ½ tsp BAKING POWDER
- ½ cup UNSALTED BUTTER
- 1 cup GRANULATED SUGAR
- 1 large EGG
- ½ cup WHOLE MILK
- 1 tsp VANILLA EXTRACT
- 1 lb FRESH STRAWBERRIES
Preheat your oven to 350 degrees now. Grease two round pans with a little butter. Line the bottoms with round parchment paper pieces.
Whisk the flour and baking powder together. Do this in a medium bowl very gently. Set this dry mixture aside for a moment.
Cream the butter and sugar in a bowl. Use your mixer on a medium speed setting. The mix should look pale and very fluffy.
Add the eggs one at a time now. Mix well after you drop each egg in. This creates a very smooth and even batter.
Add the flour mix and milk in turns. Start with flour and end with flour too. Do not overmix the batter at this stage.
Fold in the sliced strawberries using a spatula. Be very gentle so they do not crush. Pour the batter evenly into your two pans.
Bake the cakes for about thirty minutes total. A toothpick should come out clean and dry. Let them cool in the pans for a bit.
Remove the cakes and place on a rack. Let them cool completely before you add frosting. This prevents the cream from melting away fast.
- Use fresh berries instead of frozen ones for texture.
- Measure your flour with a spoon and level tool.
- Make sure your butter is soft but not melted.
- Do not open the oven door during the baking.
- Let the cake cool fully before you start frosting.
- Slice strawberries into thin even pieces for the middle.
