Equipment

  • Electric mixer
  • Large bowl
  • Baking Pan
  • Parchment paper
  • Rubber spatula
  • Wire rack
  • Offset spatula

Ingredients

  • 6 large Eggs
  • 3/4 cup Granulated Sugar
  • 1/2 cup Cocoa Powder
  • 1/2 cup All-Purpose Flour
  • 1 tsp Vanilla Extract
  • 1/4 tsp Salt
  • 2 cups Heavy Cream
  • 1/2 cup Powdered Sugar
  • 1/2 cup Butter
  • 1 cup Dark Chocolate

Instructions

1. Bake the Sponge:

  • Spread the batter thin on your baking pan. Bake it until it feels springy to the touch.

2. Roll the Cake:

  • Roll the warm cake in a clean towel. This prevents the cake from cracking later on.

3. Make the Filling:

  • Whip the heavy cream until it is thick. Add a little sugar for a sweet taste.

4. Spread the Cream:

  • Unroll the cool cake very carefully. Spread the white cream evenly over the surface.

5. Roll it Up:

  • Roll the cake back into a log shape. Keep the seam facing down on the plate.

6. Frost the Log:

  • Cover the outside with chocolate ganache. Use a fork to create a wood texture.

7. Add Decorations:

  • Dust the top with extra powdered sugar. Add berries or mint leaves for a festive look.

Notes

➜ Roll the cake while it is still very warm.
