- 2 tbsp OLIVE OIL
- 1 large YELLOW ONION
- 2 large BELL PEPPERS
- 3 cloves GARLIC
- 2 tbsp CHILI POWDER
- 1 tsp CUMIN
- 28 oz DICED TOMATOES
- 15 oz BLACK BEANS
- 15 oz KIDNEY BEANS
- 2 cups VEGETABLE BROTH
- 1 tsp SALT
- 1/2 tsp BLACK PEPPER
Sauté the Vegetables: Heat the olive oil in your pot. Add the onions and peppers. Cook them until they are soft. This takes about five minutes.
