Equipment

  • Medium saucepan
  • Whisk
  • Measuring Cups
  • Measuring Spoons
  • Fine-mesh sieve
  • Small glass bowls.
  • Plastic wrap

Ingredients

  • 3 cups whole milk.
  • 3/4 cup granulated sugar.
  • 3 tablespoons cornstarch.
  • 1/4 teaspoon salt.
  • 3 large egg yolks.
  • 1 tablespoon unsalted butter.
  • 1 teaspoon pure vanilla extract.

Instructions

  • Whisk sugar, cornstarch, and salt in a pan. Make sure there are no lumps left.
  • Slowly whisk in milk and egg yolks. Keep whisking until the mixture is very smooth.
  • Place the pan over medium heat. Stir constantly so the bottom does not burn.
  • Bring it to a gentle boil. Let it bubble for about one minute. It should look thick like glue.
  • Remove the pan from the heat. Stir in the butter and vanilla extract well.
  • Pour the pudding through a sieve. Cover with plastic wrap and chill for three hours.

Notes

  • Use whole milk for a creamier texture.
  • Always stir constantly to avoid burnt spots.
  • Strain the pudding to remove any tiny egg bits.
  • Press plastic wrap directly on the pudding surface. This prevents a tough skin from forming on top.
