Paper towels
- 1 whole TURKEY 12-14 lbs
- 1/2 cup UNSALTED BUTTER
- 2 tbsp KOSHER SALT
- 1 tbsp BLACK PEPPER
- 1 large YELLOW ONION
- 4 cloves GARLIC
- 5 sprigs FRESH SAGE
- 5 sprigs FRESH THYME
Preheat your oven to 350 degrees now. Remove the giblets from the turkey cavity. Pat the entire bird dry with paper towels.
Rub the butter all over the turkey skin. Season it heavily with salt and black pepper. Do not forget to season the inside too.
Stuff the cavity with onion, garlic, and herbs. These will release steam and flavor during cooking. Tie the legs tightly with the kitchen twine.
Place the turkey on the rack breast-side down. This is the secret to the upside-down method. It keeps the breast meat moist and soft.
Slide the pan into the hot oven carefully. Roast the turkey for about two hours like this. The juices will soak into the breast meat.
Carefully flip the turkey over using clean towels. Now the breast side should face toward the top. This allows the skin to get very crispy.
Continue roasting until the meat reaches 165 degrees. Use your thermometer to check the thickest part. Let the bird rest before you start carving.
- Always thaw your turkey completely in the fridge first.
- Pat the skin very dry for the crispiest results.
- Use a lot of salt to flavor the meat.
- Let the turkey rest for thirty minutes before slicing.
- Keep the oven door closed to maintain steady heat.
- Check the temperature in the thigh for safety.
- Use fresh herbs instead of dried for better flavor.
- Wear silicone gloves to flip the hot turkey safely.
