Ingredients
  

  • 2 lbs GROUND TURKEY
  • 2 tbsp OLIVE OIL
  • 1 medium YELLOW ONION
  • 2 large BELL PEPPERS
  • 3 cloves GARLIC
  • 2 tbsp CHILI POWDER
  • 1 tsp CUMIN
  • 28 oz DICED TOMATOES
  • 15 oz KIDNEY BEANS
  • 2 cups CHICKEN BROTH

Instructions
 

  • Place the Dutch oven on the stove. Add the olive oil over medium heat. Let the oil get warm for one minute.
  • Add the chopped onions and bell peppers. Stir them until they become soft. This usually takes about five minutes.
  • Put the ground turkey into the pot. Break it apart with your wooden spoon. Cook it until the meat is no longer pink.
  • Stir in the garlic and the dry spices. Cook them for just one minute. You will smell a very strong, nice aroma.
  • Pour in the tomatoes and the chicken broth. Add the rinsed kidney beans to the mix. Stir everything together until it is well combined.
  • Turn the heat down to a low setting. Cover the pot with a heavy lid. Let it simmer for thirty minutes to thicken.

Notes

  • Use dark meat turkey for a much juicier flavor.
  • Bloom your spices in oil to release more aroma.
  • Do not overcook the beans or they will get mushy.
