- 2 lbs GROUND TURKEY
- 2 tbsp OLIVE OIL
- 1 medium YELLOW ONION
- 2 large BELL PEPPERS
- 3 cloves GARLIC
- 2 tbsp CHILI POWDER
- 1 tsp CUMIN
- 28 oz DICED TOMATOES
- 15 oz KIDNEY BEANS
- 2 cups CHICKEN BROTH
Place the Dutch oven on the stove. Add the olive oil over medium heat. Let the oil get warm for one minute.
Add the chopped onions and bell peppers. Stir them until they become soft. This usually takes about five minutes.
Put the ground turkey into the pot. Break it apart with your wooden spoon. Cook it until the meat is no longer pink.
Stir in the garlic and the dry spices. Cook them for just one minute. You will smell a very strong, nice aroma.
Pour in the tomatoes and the chicken broth. Add the rinsed kidney beans to the mix. Stir everything together until it is well combined.
Turn the heat down to a low setting. Cover the pot with a heavy lid. Let it simmer for thirty minutes to thicken.
- Use dark meat turkey for a much juicier flavor.
- Bloom your spices in oil to release more aroma.
- Do not overcook the beans or they will get mushy.
- Taste the chili before serving to check the salt.
- Add a splash of lime juice for a bright finish.
