Ingredients
  

  • 6-7 lbs Turkey Breast (bone-in)
  • 0.5 cup Unsalted Butter (softened)
  • 1 tbsp Fresh Sage (chopped)
  • 1 tbsp Fresh Rosemary (chopped)
  • 1 tbsp Fresh Thyme (chopped)
  • 1 tbsp Kosher Salt
  • 1 tsp Black Pepper
  • 2 cloves Garlic (minced)

Instructions
 

  • Preheat your oven to 325 degrees Fahrenheit. Set the rack to the middle position.
  • Pat the turkey breast completely dry using paper towels to ensure crispy skin.
  • In a small bowl, mix softened butter, sage, rosemary, thyme, salt, pepper, and garlic.
  • Carefully loosen the skin from the meat and rub half the butter mixture underneath.
  • Spread the remaining herb butter evenly over the outside of the turkey skin.
  • Place the turkey breast in a roasting pan and roast for about 2 hours.
  • Remove from oven when the internal temperature reaches 165 degrees Fahrenheit.
  • Let the turkey rest for 15 minutes before carving to keep it juicy.

Notes

Always use a meat thermometer for the best results. Resting the meat is a crucial step for moisture retention. If the skin browns too quickly, tent it loosely with foil.
