Ingredients

  • 12 lb WHOLE TURKEY
  • 1 cup UNSALTED BUTTER
  • 1 cup DRY WHITE WINE
  • 2 tbsp SEA SALT
  • 1 tbsp BLACK PEPPER
  • 4 sprigs FRESH HERBS
  • 1 whole YELLOW ONION
  • 1 whole FRESH LEMON

Instructions

Step 1:

  • Remove the turkey from the cold fridge. Let it sit for thirty minutes now. This helps it cook very evenly later.

Step 2:

  • Take out the neck and the giblets. Save them for making a rich gravy. Wash the bird inside and out very well.

Step 3:

  • Dry the skin with many paper towels. Dry skin makes for very crispy results. Do not skip this important step today.

Step 4:

  • Melt the butter in a small pan. Mix in the white wine and herbs. This is for the special butter bath.

Step 5:

  • Season the inside with salt and pepper. Place the onion and lemon inside now. This adds flavor from the inside out.

Step 6:

  • Tie the legs together with kitchen twine. Tuck the wings under the bird's body. This keeps the shape very nice and neat.

Step 7:

  • Soak the cheesecloth in the butter mix. Drape it over the whole turkey breast. This keeps the white meat very juicy.

Step 8:

  • Put the turkey into the hot oven. Roast it until the skin is gold. Baste it every thirty minutes with juice.

Notes

Tip 1: Always use a thermometer for the best safety.
Tip 2: Let the turkey rest before you slice it.
Tip 3: Thaw your frozen turkey in the fridge slowly.
Tip 4: Keep the oven door closed while you roast.
Tip 5: Use fresh herbs for a much better aroma.
