Ingredients
  

  • 2 large CHICKEN BREASTS
  • 2 cups CHICKEN BROTH
  • 3 sprigs FRESH THYME
  • 2 cloves GARLIC
  • 1 tsp BLACK PEPPERCORNS
  • 1 medium LEMON

Instructions
 

  • Place the chicken in your large skillet now. Arrange the pieces in a single flat layer. Do not overlap the chicken breasts at all.
  • Add the broth and the fresh herbs next. Put the garlic and lemon slices in too. The liquid should just cover the meat.
  • Turn the stove to a medium-high heat setting. Wait for the liquid to reach a simmer. Do not let it reach a full boil.
  • Reduce the heat to a very low setting. Put the lid on the skillet very tightly. This traps the heat for gentle cooking.
  • Cook the meat for about fifteen minutes total. Check the thickest part with your thermometer now. It should read 165 degrees Fahrenheit clearly.
