Equipment

  • Large Mixing Bowl
  • Medium mixing bowl
  • Whisk
  • Non-stick Griddle
  • Measuring Cups
  • Flexible Spatula

Ingredients

  • 1 1/2 cups ALL-PURPOSE FLOUR
  • 1 tbsp WHITE SUGAR
  • 2 tsp BAKING POWDER
  • 1/2 tsp SALT
  • 1 1/4 cups MILK
  • 3 tbsp UNSALTED BUTTER
  • 1 Large EGG

Instructions

  • Whisk your flour and sugar together first. Add the baking powder and salt now. Mix these dry ingredients in the large bowl.
  • Whisk the milk and egg together well. Add the melted butter to this mixture. Use the medium bowl for these wet items.
  • Create a small well in the dry flour. Pour the wet mixture into the center. Stir everything until it is just combined.
  • Do not overmix the pancake batter now. A few small lumps are totally fine. This keeps the pancakes very soft.
  • Heat your griddle over a medium flame. Lightly grease the surface with some butter. Wait for the pan to get hot.
  • Pour batter onto the hot griddle slowly. Use about three tablespoons for each pancake. Space them out so they do not touch.
  • Look for small bubbles on the top side. Wait until the edges look dry. This takes about two to three minutes.
  • Flip the pancake over with your spatula. Cook the other side until it is golden. This usually takes only one more minute.

Notes

  • Use fresh baking powder for the best rise.
  • Do not press down on pancakes while cooking.
  • Keep your griddle at a steady medium heat.
  • Let the batter rest for five minutes first.
  • Wipe the pan between batches for clean edges.
