  • Parchment paper
  • Pastry brush
  • Small Piping Bag

Ingredients

  • 1 Cup Whole Milk
  • 2 1/4 Tsp Active Dry Yeast
  • 1/2 Cup Granulated Sugar
  • 1/2 Cup Unsalted Butter
  • 2 Large Eggs
  • 4 Cups All Purpose Flour
  • 1 Tsp Ground Cinnamon
  • 1/2 Tsp Ground Allspice
  • 1/2 Tsp Ground Nutmeg
  • 1 Tsp Fine Salt
  • 1/2 Cup Currants
  • 1 Tbsp Orange Zest
  • 1 Cup Confectioners Sugar
  • 2 Tbsp Lemon Juic

Instructions

  • Proof the Yeast: Mix warm milk, sugar, and yeast in a bowl. Let it sit until it gets very foamy.
  • Mix the Dough: Add butter, eggs, and spices to the yeast mix. Slowly stir in the flour until a dough forms.
  • Knead the Dough: Use a mixer to knead for five minutes. The dough should be smooth and slightly sticky.
  • First Rise: Place dough in a greased bowl. Cover it and let it double in size. This takes one hour.
  • Add Fruit: Fold in the currants and orange zest. Make sure they are spread evenly in the dough.
  • Shape the Buns: Divide the dough into twelve equal pieces. Roll them into smooth balls with your hands.
  • Second Rise: Place balls on a baking sheet. Cover them again for forty minutes until they look puffy.
  • Bake the Buns: Put them in a hot oven at 375 degrees. Bake for twenty minutes until they are golden brown.
  • Make the Glaze: Mix powdered sugar with a little lemon juice. It should be thick enough to pipe.
  • Add the Crosses: Let the buns cool a little bit. Pipe a white cross on top of every bun.

➔ Always pipe the icing after the buns have cooled slightly.
➔ Use fresh spices for the strongest and best holiday flavor.
