Equipment

  • Large Dutch Oven
  • Chef's knife.
  • Whisk
  • Baking Dish
  • Pastry brush
  • Rolling Pin

Ingredients

  • 3 cups COOKED CHICKEN BREAST
  • 1 sheet FROZEN PUFF PASTRY
  • 2 cups CHICKEN STOCK
  • 1/2 cup HEAVY CREAM
  • 1/3 cup ALL PURPOSE FLOUR
  • 1 cup CARROTS AND PEAS
  • 1 medium YELLOW ONION
  • 4 tbsp UNSALTED BUTTER
  • 1 tsp FRESH THYME
  • 1 large EGG

Instructions

  • Preheat your oven to 400 degrees right now. Melt the butter in your large Dutch oven. Add the onions, carrots, and celery to the pot.
  • Cook the vegetables until they are very soft. This usually takes about eight to ten minutes. Stir them occasionally so they do not burn.
  • Whisk in the flour to coat the vegetables. Cook this for two minutes to remove flour taste. Slowly pour in the warm chicken stock now.
  • Stir the mixture until the sauce gets thick. Add the heavy cream and the fresh thyme. Season it well with salt and black pepper.
  • Fold in the cooked chicken and frozen peas. Stir gently to combine all the filling ingredients. Pour the hot mixture into your baking dish.
  • Unroll the thawed puff pastry on a board. Place it carefully over the top of the dish. Trim the edges to fit the dish perfectly.
  • Cut a few small vents in the pastry top. This allows the steam to escape while baking. Brush the dough with a beaten egg wash.
  • Place the dish in the hot center oven. Bake for twenty-five to thirty minutes total. The pastry should be very high and golden.

Notes

  • Thaw the puff pastry in the fridge overnight.
  • Use a rotisserie chicken to save much prep time.
  • Keep the puff pastry cold until you use it.
  • Do not overfill the baking dish with the sauce.
  • Cut vents in the dough to prevent a mess.
  • Use a rimmed sheet pan to catch any spills.
  • Let the pie rest for ten minutes before serving.
  • Brush with egg wash for a professional shiny look.
