Ingredients
  

  • 1 lb Ground Beef
  • 1 lb Ground Pork
  • 2 tbsp Olive Oil
  • 1 cup Yellow Onion
  • 1 cup Carrots
  • 1 cup Celery
  • 3 cloves Garlic
  • 2 tbsp Tomato Paste
  • 1 cup Whole Milk
  • 1 cup White Wine
  • 28 oz Crushed Tomatoes
  • 1/4 tsp Nutmeg
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions
 

1. Brown the Meat

  • Start by heating oil in your large pot. Add the beef and pork to the hot oil. Break the meat into very small pieces. Cook it until it is no longer pink. Drain any extra fat from the pot now.

2. Sauté the Vegetables

  • Add the chopped onion, carrots, and celery. Stir them into the meat over medium heat. Cook until the vegetables become soft and clear. This step builds the foundation of the flavor.

3. Add Aromatics and Paste

  • Stir in the minced garlic for one minute. Next, add the tomato paste to the pot. Stir it well to coat all the ingredients. Let it cook until the paste turns dark red.

4. Deglaze with Wine

  • Pour the white wine into the hot pot. Scrape the bottom to loosen the brown bits. Let the wine simmer until it mostly evaporates. This step adds a lot of hidden depth.

5. Simmer with Milk

  • Pour the whole milk into the meat mixture. Let it simmer gently until the milk disappears. This makes the meat very soft and silky. It is a traditional Italian cooking secret.

6. Add Tomatoes and Herbs
