Equipment

  • Large Glass Bowl
  • Rolling Pin
  • 9-inch pie plate.
  • Pastry Cutter
  • Measuring Cups
  • Small Pastry Brush
  • Wire cooling rack

Ingredients

  • 2 ½ cups All-Purpose Flour
  • 1 tsp Salt
  • 1 tsp Sugar
  • 1 cup Unsalted Butter
  • ¼ cup Cold Water
  • 6 cups Blueberries
  • ¾ cup Sugar
  • ¼ cup All-Purpose Flour
  • 1 tbsp Lemon Juice
  • 1 tsp Cinnamon
  • 1 large Egg

Instructions

1.Make the Dough:

  • Mix flour, salt, and sugar first. Cut in cold butter with a tool. Add cold water slowly until it holds. Chill the dough for one hour.

2.Roll the Bottom:

  • Roll out half of the chilled dough. Place it into your pie plate. Let the edges hang over the side. Keep it cold while you prep fruit.

3.Prepare the Filling:

  • Put the blueberries in a large bowl. Toss them with sugar, flour, and lemon. Add the cinnamon and stir very gently. Do not crush the berries.

4.Fill the Pie:

  • Pour the berry mixture into the crust. Spread them out so they are level. Do not overfill the center too much.

5.Add the Top:

  • Roll out the second piece of dough. Place it over the top of the fruit. You can also cut it into strips. This makes a pretty lattice top.

6.Seal the Edges:

  • Pinch the top and bottom crusts together. Fold them under for a clean look. Use a fork to crimp the edges.

7.Bake the Pie:

  • Brush the top with the egg wash. Bake at 400 degrees for 20 minutes. Lower heat to 375 for 40 minutes more.
  • 8.Cool the Pie:
  • Take the pie out of the oven. Let it sit for four full hours. This helps the filling set perfectly.
