Equipment

  • Baking Sheet
  • Parchment paper
  • Large bowl
  • Electric mixer
  • Rubber spatula
  • Measuring Cups
  • Small Scoop
  • Wire rack

Ingredients

  • 14 oz SWEETENED SHREDDED COCONUT
  • 7/8 cup SWEETENED CONDENSED MILK
  • 1 tsp VANILLA EXTRACT
  • 1 pinch SALT
  • 2 large EGG WHITES

Instructions

Step 1:

  • Start by heating your oven to 325 degrees. This is the perfect temperature for baking. Line your baking sheets with parchment paper now.

Step 2:

  • Grab your large bowl for the mix. Combine the coconut and condensed milk. Add the vanilla and the salt too. Stir them until they are well blended.

Step 3:

  • Put your egg whites in a clean bowl. Use your electric mixer on high speed. Beat them until they have stiff peaks. This should take a few minutes.

Step 4:

  • Now you must fold the whites in. Use your spatula for this part. Be very gentle so they stay fluffy. Mix until the coconut is damp.

Step 5:

  • Use your scoop to make the balls. Place them on the prepared baking sheet. Leave one inch of space between them. Do not crowd the pan.

Step 6:

  • Place the pan in the hot oven. Bake the cookies for ten minutes. Rotate the pan halfway through the time. This helps them brown on all sides.

Step 7:

  • Bake for about ten more minutes. The edges should look golden brown. The tops will stay a bit white. Do not let them burn.

Step 8:

  • Take the pan out of the oven. Let the cookies sit for five minutes. Then move them to the wire rack. Let them cool completely before eating.

Notes

  • Make sure to use room temperature eggs for best volume.
  • Do not overmix the egg whites into the coconut mixture.
  • Store your cookies in an airtight container for lasting freshness.
  • Dip the cookie bottoms in melted chocolate for extra flavor.
  • Use a damp scoop to prevent the dough from sticking.
  • Check your oven temperature with a thermometer for accuracy.
  • Always use sweetened coconut for the best chewy texture.
  • Let the cookies cool fully so they set properly.
