- 1 lb DRIED NAVY BEANS
- 1/2 lb SALT PORK or BACON
- 1 medium YELLOW ONION
- 1/2 cup MOLASSES
- 1/4 cup BROWN SUGAR
- 1 tsp DRY MUSTARD
- 1/2 tsp BLACK PEPPER
- 1 tsp SALT
- 4 cups WATER
Soak the Beans: Put the dried beans in a large pot. Cover them with plenty of cold water. Let them sit for at least eight hours. This makes the beans cook much faster later.
Boil the Beans: Drain the soaking water from the pot. Add fresh water to cover the beans again. Boil them gently until they start to feel soft. This usually takes about forty-five to sixty minutes.
