Equipment

  • Large pot
  • Colander
  • Dutch oven
  • Measuring Cups
  • Measuring Spoons
  • Wooden Spoon
  • Sharp knife
  • Cutting Board

Ingredients

  • 1 lb DRIED NAVY BEANS
  • 1/2 lb SALT PORK or BACON
  • 1 medium YELLOW ONION
  • 1/2 cup MOLASSES
  • 1/4 cup BROWN SUGAR
  • 1 tsp DRY MUSTARD
  • 1/2 tsp BLACK PEPPER
  • 1 tsp SALT
  • 4 cups WATER

Instructions

  • Soak the Beans: Put the dried beans in a large pot. Cover them with plenty of cold water. Let them sit for at least eight hours. This makes the beans cook much faster later.
  • Boil the Beans: Drain the soaking water from the pot. Add fresh water to cover the beans again. Boil them gently until they start to feel soft. This usually takes about forty-five to sixty minutes.
  • Prep the Pot: Preheat your oven to 300 degrees. Take your Dutch oven and add the chopped bacon. Mix in the chopped onions and the parboiled beans.
  • Make the Sauce: Mix molasses, sugar, and mustard in a bowl. Pour this sweet mixture over the beans. Add enough cooking liquid to cover the beans fully.
  • Bake Slowly: Cover the pot with a tight lid. Put it in the oven for several hours. Stir the beans every hour to keep them moist.
  • Final Thickening: Remove the lid for the last thirty minutes. This helps the sauce get thick and very shiny. The beans should look dark and smell amazing.

Notes

➔ Keep the beans covered with liquid during the bake.
➔ Add a splash of vinegar for a bright finish.
➔ Let the beans rest before serving to thicken sauce.
➔ Use a heavy pot to prevent any bottom burning.
