Equipment

  • Baking Pan
  • Parchment paper
  • Electric mixer
  • Mixing Bowls
  • Rubber spatula
  • Sharp knife
  • Cooling rack

Ingredients

  • 1/2 cup HONEY
  • 2 large APPLES
  • 1 1/2 cups ALL-PURPOSE FLOUR
  • 1 tsp BAKING POWDER
  • 1/2 tsp GROUND CINNAMON
  • 1/4 tsp SALT
  • 1/2 cup UNSALTED BUTTER
  • 3/4 cup GRANULATED SUGAR
  • 2 large EGGS
  • 1 tsp VANILLA EXTRACT

Instructions

  • Preheat your oven to 350 degrees Fahrenheit. Butter your round cake pan very well. Place a piece of parchment paper at the bottom.
  • Pour the honey into the bottom of the pan. Spread it around until it covers the whole surface. This forms the sweet glaze for the fruit.
  • Peel and slice your apples into thin wedges. Arrange them in a circle over the honey. Make sure they overlap slightly for a pretty look.
  • In a bowl, whisk your flour and baking powder. Add the cinnamon and a little bit of salt. Set this dry mixture aside for a moment.
  • Cream the butter and sugar in a large bowl. Beat them until the mixture looks pale and fluffy. Add the eggs one at a time while mixing.
  • Stir in the vanilla extract to the wet batter. Gradually add the dry ingredients to the wet ones. Mix until the batter is just smooth and combined.
  • Spoon the batter carefully over the sliced apples. Smooth the top with your rubber spatula gently. Do not move the apples underneath the batter.
  • Bake the cake for about forty-five minutes. Check it with a toothpick to see if it is done. It should come out clean from the center.
  • Let the cake cool in the pan for ten minutes. Run a knife around the edge to loosen it. Invert it onto a plate while still warm.

Notes

  • Use room temperature eggs for a smoother cake batter.
  • Do not overmix the batter after adding the flour.
  • Slice the apples to the same thickness for even cooking.
  • Peel the apples so the topping is very soft.
  • Flip the cake while warm so honey does not stick.
  • Measure your flour using the spoon and level method.
  • Use high-quality honey for the best possible flavor.
  • Press apples down slightly into the honey before adding batter.
