- 1/2 cup HONEY
- 2 large APPLES
- 1 1/2 cups ALL-PURPOSE FLOUR
- 1 tsp BAKING POWDER
- 1/2 tsp GROUND CINNAMON
- 1/4 tsp SALT
- 1/2 cup UNSALTED BUTTER
- 3/4 cup GRANULATED SUGAR
- 2 large EGGS
- 1 tsp VANILLA EXTRACT
Preheat your oven to 350 degrees Fahrenheit. Butter your round cake pan very well. Place a piece of parchment paper at the bottom.
Pour the honey into the bottom of the pan. Spread it around until it covers the whole surface. This forms the sweet glaze for the fruit.
Peel and slice your apples into thin wedges. Arrange them in a circle over the honey. Make sure they overlap slightly for a pretty look.
In a bowl, whisk your flour and baking powder. Add the cinnamon and a little bit of salt. Set this dry mixture aside for a moment.
Cream the butter and sugar in a large bowl. Beat them until the mixture looks pale and fluffy. Add the eggs one at a time while mixing.
Stir in the vanilla extract to the wet batter. Gradually add the dry ingredients to the wet ones. Mix until the batter is just smooth and combined.
Spoon the batter carefully over the sliced apples. Smooth the top with your rubber spatula gently. Do not move the apples underneath the batter.
Bake the cake for about forty-five minutes. Check it with a toothpick to see if it is done. It should come out clean from the center.
Let the cake cool in the pan for ten minutes. Run a knife around the edge to loosen it. Invert it onto a plate while still warm.
- Use room temperature eggs for a smoother cake batter.
- Do not overmix the batter after adding the flour.
- Slice the apples to the same thickness for even cooking.
- Peel the apples so the topping is very soft.
- Flip the cake while warm so honey does not stick.
- Measure your flour using the spoon and level method.
- Use high-quality honey for the best possible flavor.
- Press apples down slightly into the honey before adding batter.
