Instructions
Heat olive oil in a large heavy pot over medium heat.
Brown the pork shoulder and sausage on all sides until golden.
Remove meat and add chopped onions and garlic to the pot.
Cook until onions are soft and translucent.
Deglaze the pan with red wine and scrape up brown bits.
Add crushed tomatoes and return the meat to the pot.
Simmer on low heat for at least three hours.
Stir in fresh basil just before serving over your favorite pasta.
Notes
Ensure you cook pork to 145°F and sausage to 160°F for safety.
